Each organic flour from Pierre Baré is made by milling the cereal grain in its mill, but depending on the extraction rate (the part of the grain retained), its properties change:
- Wholemeal flour (100%): The entire grain is milled, including bran and germ. Rich in fiber and nutrients, it offers a robust flavor and dense texture. Perfect for whole grain breads and healthy recipes.
- Whole wheat flour (80%): A small part of the bran is removed, but the germ and most nutrients are retained. An ideal balance between taste and lightness.
- Semi-whole flour (65%): Lighter than whole wheat, with a subtle flavor. Versatile, suitable for both breads and pastries.
