Semi-aged goat cheese. Aging: 2 weeks. Its rind is charcoal ash-coated, giving it a nice balance, and its white paste has a melting texture. Its name, Sainte-Maure, comes from the old French word "maure," meaning "black," a tribute to Sainte Maure, a mystical figure associated with the cycles of life's transformation. A symbol of fermentation and rebirth, she once watched over the decomposition of plants into black manure and the aging of cheeses, ensuring their preservation.

Ingredients*: organic goat milk, salt, vegetable charcoal, lactic ferments, rennet.
