Typical cylindrical-shaped cheese, made from whole cow's milk. Its minimum aging of 2 months on wooden boards gives it an intense and distinctive aroma and flavor, making it a unique and highly appreciated cheese. The rind is treated for about 20 additional days with extra virgin olive oil and chopped rosemary leaves, giving it the scent and taste of the Mediterranean. The rind is entirely edible.
